To change the item tracking option you must zero out all inventory quantities and make sure the item does not exist on any open transactions. So, if you have existing inventory you will need to adjust out the inventory first, then change the field to 'Lot Numbers'.GP can be a bit finicky about this, so that even when you have adjusted out all inventory and made sure all transactions for the item are posted the field will still be grayed out.
